Wild rice and exotic mushrooms

Ingredients

  • 8 oz oyster mushrooms

  • 1 tbsp ghee

  • 2 cups wild rice, cooked

  • 1/4 cup apple cider vinegar

  • 1/2 tsp garlic powder

  • 1/3 cup chopped pecans

  • salt and pepper to taste

Directions

  1. Cook rice according to package

  2. Shred the oyster mushrooms

  3. Heat skillet to medium-high heat, once hot add ghee and melt

  4. Add oyster mushrooms, stir to get mushrooms covered in the ghee

  5. Cook for 10 mins, stirring occasionally

  6. Turn heat down to low and add garlic powder, salt and pepper.

  7. Add apple cider vinegar and deglaze skillet - this will release all the browned cooked on areas and give the dish more flavor.

  8. Add mushrooms mixture to rice and stir in the pecans. ENJOY!
