Mushroom Soup
Ingredients:
5 cups fresh mushrooms
1 1/2 cups chicken broth
1/2 cups chopped onion
1/8 tsp dried thyme
3 tbsp butter (any butter sub will work to make this DF)
3 tbsp flour (any will work to make this GF)
1/4 tsp salt
1/4 tsp pepper
1 cup half and half ( I use goat milk)
1 tbsp sherry
Directions:
In a large sauce pan, cook mushrooms in the broth with onions and thyme until tender, about 10 - 15 mintues.
In a blender or food processor, puree the mixture, leaving some chunks of vegetables in it. Set aside.
In the saucepan, melt the butter, whisk in the flour until smooth. Add the salt, pepper, half and half, and vegetable puree. Stirring constantly, bring soup to a boil and cook until thickened. Adjust seasoning to taste, add sherry.
